If you could only hunt one animal, which animal would it be?

Out of need, and until we can get their population under control, coyotes. They're presence has elevated past "nuisance" levels around here and if I could manage any real success, that's what I'd hunt. But they're far too crafty (for me, at least) to get within bow range.
Certainly no less crafty, but if I could only hunt one more time in my life, I'd love to hunt a mountain goat or Dall sheep - at least until the altitude and physical rigors of the task manifested themselves as humility, ๐. So, on a regular basis, I guess that leaves late fall whitetails for me.
I've gotten crotchety in my 50's (my boys call it "soft", but "crotchety" allows me to keep my man card). After 20+ years in the Army and more foul-weather hunts than I can possibly recall, I'm mostly a fair-weather hunter these days. If I haven't killed a deer by the end of November, I usually just leave my son and grandson to hunt on our property in the really cold months. I tend to sleep in and have hot chocolate and watch cartoons with the younger grandchildren. The boys always come through, though. That said, I'd sure gear up and give a Rocky Mountain goat or sheep hunt a go in less than fair weather. Likely an item that won't get scratched off the bucket list. And it goes so well, perfectly, in fact, each time I go there in my mind...

Whitetail deer would be my favorite and they are close to home and plentiful.

Without a doubt it would be Black Bear.
That said, probably would be hogs but as of yet I haven't hunted them enough to even see one close enough to shoot but if I lived where they could be hunted think I would rather hunt them.

Kelly, What I like about bear Hunting is I donโt have to get up early so I can have a nice big breakfast and hang around camp until mid day. ๐
